To roast garlic, cut the top off the whole head and place it on a sheet of aluminum foil. Drizzle it with olive oil an wrap the foil tightly around the garlic. Place it on the top rack of the barbecue on LOW for 30 minutes, or until soft. Let cool, then squeeze the sweet, roasted garlic fom each clove into a small bowl.
