Recipe: Prosciutto & Provolone Wrapped Asparagus
Ingredients:
- 1 bunch of Asparagus (small to medium size)
- 1 pack or approx 8 slices of Provolone
- 1 pack or approx 8 slides of Prosciutto
Prosciutto & Provolone Wrapped Asparagus is one of my favorite side dishes as it's extremely easy to prep and the savoury results are incredible every time!
Quick Tip: Take the Provolone cheese out of the fridge 10-15 min prior to assembling so that it is much easier to roll and work with.
Instructions:
- Step One: Start by thoroughly washing your asparagus and then towel dry prior to wrapping. Using dry asparagus makes it much easier to handle and wrap than when it is wet and slippery.
- Step Two: Proceed to trim the stems so that you leave yourself about 6" of spear including the head and set aside.
- Step Three: Take a piece of provolone and tightly wrap it around 2 or 3 spears of asparagus. If your provolone is oval shaped, wrap the long way so that more of the spear is covered.
- Step Four: Go ahead and wrap a layer of proscuitto over the cheese to hold everything together. Sometimes its eaiser to leave the proscuitto in the package and roll the pieces directly off the paper to avoid handling and damaging the thin delicate pieces of meat. Repeat this process for all remaining asparagus.

- Step Five: Once rolled up, I like to apply a light coating of cooking oil to both help keep your flavour parcel stuck together and also to create a nice crisp texture on the outside of the meat. Once I learned this trick I stopped using the silicon bands as shown in the photo as they were no longer required.
- Step Six: Lightly season with your favorite seasoning! Just remember that the proscuitto is fairly salty so a small amount of rub or seasoning will go a long way.

- Step Seven: Cook at 350-400 degrees for about 20 min. Keep a close eye on the cheese and colour of the meat. You will know its ready when the prociutto has turned a dark mahagony colour and the cheese starts melting out the top and bottom of the bundles.
- Step Eight: Serve and Enjoy!
